I understand that in the Gallery settings I can chose "Thumbnails" for the style and not allow the viewer to change it. I prefer the current Thumbnail style as it does have part of the caption under the thumbnail. The older All Thumbnails does not have the caption, was well as not being stretchy. When in the Thumbnail style there is an option to "Show thumbnails in a single page". I want to make it so that option is always checked for that gallery.

In a perfect world, I would be able to create a table of thumbnails that is always seven images wide but I realize that is probably not possible. I am doing a 366 project and I would like to have each month on its own "page" by placing it in a specific gallery. Using the thumbnails one can get the overview. I would really like to make it look like a calendar, but realize that is probably not possibly.

Is there a way, such as setting a cookie using HTML in the gallery description, to force the gallery to always show the thumbnails in a single page?

There is indeed. Go to gallery settings and set the style to Thumbnails. A choice will appear for pagination, choose single page.
