Thanks for the post. The problem is that your collected photos will inherit settings from the original gallery. So, if you have set a MEDIUM resolution in the destination gallery - > but the original gallery is set to XL - the photos will be displayed in XL size. You will need to change the size in the ORIGINAL gallery to MEDIUM. I hope this helps! ...

In addition to the reasons given by dpolitt, there's also the security aspect. You could accidentally set the maximum viewing size for a gallery to Original one day, and your customers will be able to grab your full-sized originals until you notice and correct it.
